As we begin to wrap up our year, we hope that everyone had a wonderful Thanksgiving break with friends and families. As the holidays approach us, celebrating our Latinx traditions brings excitement and love. One of my favorite traditions is making tres leches cake and coquito with my mother and grandmother in the kitchen while Spanish Christmas music fills the kitchen. In the spirit of giving, the Carolina Latinx Center wanted to give you a list of delicious holiday recipes that are unique to some of the places we are from. Please let us know if you try any of these.

 

Tres Leches Biscocho

Ingredients:

· 6 large eggs

· ½ cup granulated sugar, divided

· 6 large egg yolks

· 1 cup all-purpose flour, sifted

· 1 can (14 ounces) sweetened condensed milk

· 1 can (7.6 fluid ounces) media crema

· 2/3 cup evaporated milk

· ¼ cup brandy

· 1 teaspoon vanilla extract

· 1 cup heavy whipping cream

· 2 tablespoons granulated sugar

· ½ vanilla extract

· Garnish with strawberries

 

 

Coquito

Ingredients:

· Dark spiced rum (optional)

· Cinnamon sticks

· Sweet condensed milk

· Cream of coconut

· Coconut milk

· Evaporated milk

· Ground nutmeg

· Ground cinnamon

· Vanilla extract

 

Arepas

Ingredients:

· 1 ½ cups masarepa

· 1 ½ cups water

· 1 teaspoon vegetable oil

· Kosher salt

· 2 teaspoons butter

· Fillings as desired, such as cheese, beans, shredded chicken, or pulled pork

 

 

Buñuelos Colombianos

Ingredients:

· Vegetable oil

· ¾ cup cornstarch

· ¼ cup yucca flour or tapioca starch

· 1 cup finely grated queso fresco

· 2 eggs

· ¼ teaspoon baking powder

· 2 tablespoons sugar

· Pinch salt

· 1 tablespoon milk
